any suggestions or limitations

is 1.7 compatible or am I capped at 1.6.x

You can go 1.6.x now, or wait a little more for the PR fix to be accepted and we roll out new version

What's the issue with the encryption? Is it only for send/recv?
I want to use a thumbdrive with encryption only to store diffs between snapshots from bigger drives temporarily... So I do not care to have to erase the drive later and start over.
Is the 1.7.0 version good for that?

The ondisk format needs to change, so you will need to zfs send/zfs recv the encrypted datasets when the fix comes out.

Otherwise 1.7.0 will let you do that
