Now I am trying to add the old disk back into the pool, making it mirror the first disk. How do I do that?


I convert a single disk pool to a mirror like this:

sudo zpool attach MediaPool /dev/disk9 /dev/disk10

where /dev/disk10 is the disk that is already a member of the pool. Mind you its been a while since I've done it. My notes were as follows:

in order for the additional disk to label, it needs to be ejected (i.e. not captured by finder/terminal)
use the -f to force mirroring, without setting the additional disk up as a zfs volume first
to add a third disk to a mirror use one of the mirror disks e.g. /dev/disk9, no need to identify both of the existing disks

You want zpool attach - to create a mirror. "add" in this case would make a raid0, which you probably don't want.
