As someone proficient with Linux and familiar with the Mac, but completely new to ZFS – would you recommend I start with the stable 2.2.2 version of O3X or with 2.2.3rc5?

I assume the latter should also be pretty stable already considering how long it's been available. (What's holding up the release of 2.2.3?)

Or do you think I should get more familiar with OpenZFS on Debian Linux first before turning to macOS?

I would go with the latest RC version of whatever platform (Arm vs Intel). I was having fits with an only slightly earlier version of the Intel branch (I frequently could not save over the top of a file after a change, and had to resort to Save As). Moving to the latest Intel RC fixed that problem for me.

The command line experience of ZFS is pretty much the same on Linux vs MacOS, so I don't think that matters too much. The only significant feature not implemented in the MacOS version that I'm aware of is the 'zfs allow' verb - in MacOS you always have to use sudo in front of your command to elevate to root privileges.
